I have no idea how many sets of knives we have purchased, or been given, that are not worth having. If you buy knives based on the price, you will be replacing them sooner, rather than later. After years of fighting the knife wars in my kitchen, my husband brought home a starter set of Zwilling J.A. Henckel knives. I can assure you, I don’t need anything else! They really are the best!
This review and recommendation isn’t about materialism, it is about having a tool that will really do the job for you. Outside of performance, I couldn’t care less about name brands. However, sometimes the name brand truly is the exceptional item. That is definitely the case with Henckel knives.
One note of warning BEFORE you buy! Make sure they say “made in Germany” on the knife blades and are “Zwilling J.A. Henckel”. I can neither recommend nor denounce the international line of Henckel knives. Many of them are now made in China. They may be fine, but I’m not recommending “fine”. I’m suggesting you invest in real excellence! If you are cooking and taking the time to prepare a meal, you deserve to have the best.

Look closely at the knives on the right. You can see the handles are actually fastened to either side of the piece of stainless steel that starts at the point of the blade and ends at the butt of the knife. Therefore, they knife blade will not break off, or separate from the handle. (Yes, I have had that happen with less expensive knives.)
Because of the way they are made and cryogenic tempered to harden the blade, Zwilling J.A. Henckel knives stay sharp longer. Many professional chefs will tell you to sharpen your knives before each use. I won’t disagree with that. However, most of us don’t cut multiple cuts of meat on a daily basis. For a home kitchen, you might not need to sharpen your knife for months. Regardless, most Henchel sets come with the sharpening steel tool.
